Vegetarian and gluten-free class menus

After booking a private cooking class with Bowen Appétit, we start discussing menu options. The following menus accommodate vegetarian and gluten-free diets. These menus are just a starting point – tell us what you like and we can go from there!

Recipes

Let Bowen know what interests you, and she can suggest some menus that would go well together. (There are a few premade example menus below)

  • Appetizers:
    Dates stuffed with chèvre (some can be wrapped in prosciutto if desired)
    Herbed homemade ricotta and fig tapenade
    Warm marinated olives
    Tortilla Espanola (frittata with browned onions and potatoes)
  • Salads:
    Fennel, orange, avocado salad with Kalamata olives
    Kale salad with white beans and creamy garlic dressing
    Green salad with classic/smoky/Dijon vinaigrette
  • Risottos (can be paired with a meat or seafood risotto):
    Mushrooms and chili breadcrumbs
    Spinach with lemon and nutmeg
    Lemon, peas, and fresh herbs
    Caramelized fennel, garlicky greens, chevre
  • Other main dishes:
    Roasted vegetable and white bean paella
    French lentils with roasted vegetables, parsley pistou, and poached eggs
    Tacos with roasted tomatillo salsa and chile-roasted squash and peppers
    Roasted cauliflower with salsa verde (Italian parsley sauce) and fried eggs
    Creamy polenta with garlicky greens and caramelized fennel
  • Dessert:
    Salted chocolate torte with créme fraîche whipped cream
    Butterscotch budino with whipped cream
    Individual caramel flans
    Vanilla-maple baked pears with whipped cream

Italian

  • Herbed homemade ricotta and fig tapenade with rice crackers
  • Green salad with vinaigrette
  • A pair of risottos (can substitute one meat risotto):
    Mushrooms and chili breadcrumbs
    Caramelized fennel, garlicky greens, chevre
  • Butterscotch budino with whipped cream

Spanish

  • Warm marinated olives
  • Tortilla Española (frittata with browned onions and potatoes)
  • Green salad with smoky paprika vinaigrette
  • Roasted vegetable and white bean paella (can do additional pan of meat or seafood paella)
  • Individual caramel flans

Mexican

  • Best-ever guacamole
  • Roasted beet and carrot salad with avocado and toasted pepitas
  • Chipotle chilaquiles with black beans
  • Chile-roasted squash and peppers tacos with roasted tomatillo salsa (can add a Yucatecan chicken filling or a roasted mushrooms and chorizo filling)
  • Homemade horchata (cinnamon rice beverage)
