Lentil sweet potato stew with curry

  • 3 Tbsp. olive oil
  • 3 carrots, diced
  • 3 celery, diced
  • 1 onion, diced
  • 2 garlic, minced
  • 1 1/2 lbs. sweet potato, peeled and 1/2″ dice
  • 2 tsp. salt
  • 8 cups stock
  • 2 cups / 1/2 lb. Puy lentils
  • 1 tsp. curry powder
  • 1-2 Tbsp. red wine vinegar
  • Cilantro, for serving

Cook mire poix + garlic in olive oil

Meanwhile, simmer sweet potato with salt 10 minutes

Add salt, stock, lentils, and curry to vegetables, cook 30-40 until lentils are done

Add vinegar with sweet potatoes
