Whole wheat apple muffins

Heat oven to 425, grease 12 muffin cups

Whisk together

  • 1 3/4 cup whole wheat flour
  • 1 1/2 tsp. cinnamon
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt

Prepare

  • 2 cups grated apple (1 lb. before, 14 oz. after)

Whisk

  • 1/4 cup olive oil
  • 1/4 cup maple syrup or honey
  • 2 eggs
  • 1/2 cup yogurt
  • 1/2 cup applesauce
  • 1 tsp. vanilla

Mix wet into dry, add apple

Bake 18 minutes
