As will come to the surprise of absolutely no one ever, getting a meal on the table becomes supremely more complicated with a kiddo who suddenly wants to participate in every step along the way. There are lids to take off, jars to pour out, “sauces” to make (a recent favorite – chicken stock, sugar, pepper, furikake, and parsley stems), and plenty of ingredients to taste (and then put back in the bowl). We’ve gotten better at identifying kitchen tasks that will keep him occupied, but overall these days all about simplifying. What’s quick, what’s tasty, what’s not going to turn our kitchen into a complete disaster? (Partial disaster is inevitable.)

This recipe is a perfect example of one of those dinners – hearty, straight-forward, consisting mostly of things we’re likely to have in our kitchen at any given time. A few eggs cooked in a hearty, smoky tomato sauce is a perfect main dish to accompany nearly any starch (bread, polenta, pasta, etc.) and can flexibly accommodate nearly any cheese or cooked vegetable you might have around. It comes together in one pan and requires surprisingly little attention, which might be better paid to the child gleefully trying to smash whole eggs on your cutting board. Read more

It’s been a bit rough around here lately – at one point I was nursing two injuries and two forms of illness, all at the same time – and along with work and school and everything else, we haven’t been cooking as much as we normally do. I did make a really fantastic pizza last week – pesto, mozzarella, kale, chicken, and artichoke hearts on a whole wheat crust – and hopefully soon I’ll be posting here about that. But really, considering the doozy of a month we have ahead of us, don’t be surprised if there’s a bit of radio silence in these parts.

Classic frittata recipe (with smoked salmon, fresh corn, and herbed goat cheese)

A frittata is a beautiful, easy meal to make. Combine eggs with meats, vegetables, herbs, cheese, or pretty much any other prepared ingredient you have around, and within 20 minutes you have a delicious, healthy, fancy-seeming meal. As an added bonus it’s perfect for making ahead, since you can wrap and freeze it for up to 1 month or at the very least save the leftovers (which are equally good room temperature or warm) for breakfast or lunch the next day. (A slice of frittata and some bread make a pretty delicious sandwich, I might add.)

And this is exactly the sort of dish I’ve been thinking about a lot lately. I’ve mentioned on the site before that I’ve been putting together a guide to these sorts of basic, foundational recipes, all of which act as a backbone or a stage for whatever vegetables, proteins, grains, or other items I happen to have in my kitchen or that look good at a market stand. These recipes make it easy to eat seasonally and help me avoid the sort of puzzle-piecing anxiety that results from grocery shopping without a plan in mind, and for most people having these sorts of recipes around can open a new world of quick, easy, healthy home-cooked meals. I love to talk about these sorts of “anything goes” recipes because they do wonders at making people more interested in cooking, more comfortable in the kitchen, and more at-ease with letting go of recipes and diverging from planned-out shopping lists.

Happy birthday, Mr. Close.

At noon on a Monday, a couch, flannel pants, wool socks, a ginormous mug of tea, and a massive pile of discarded tissues can only mean one thing – home sick from work today. I spent all weekend playing my “don’t get sick” cards, which of course meant that it hit me today even worse.
