Brown sugar applesauce with bourbon and vanilla

Every once in a while I realize that something is easy. Unfortunately, I am particularly good at making things difficult – both in and out of the kitchen – but sometimes before I even begin to figure out how something actually works I just imagine it to be so difficult that I move no further.

Case in point: applesauce. What could be so difficult about applesauce? Answer: nothing, it turns out. I don’t know what I was so afraid of. Well, I suppose there is some peeling and chopping of apples, which can be kind of a pain, but not when there’s some good music on, or a good TV show playing in the background, or maybe a podcast, or just some good conversation. Let’s all hang out in our kitchens and drink whiskey with friends and make applesauce!

The snack of my dreams

To pass the time on the road, we’ve been listening to a podcast about snacks.

(You are not surprised.)

(It might sound very boring, but it’s actually quite funny and entertaining.)

In any case, I’ve been thinking a lot about snacks. And not just in the way that a podcast about … turtles, let’s say, might have one thinking about turtles. I’m thinking about snacks like it’s my job. About what kind of road trip snack we should buy at the next convenience store (Don’t even get me started on the wondrous world of potato chips that we’re experiencing up here in Canada – Sweet chili and sour cream! Spicy ketchup! Hot wings! Worcestershire sauce and shallot! What?! Yes. Also, does anyone have any guesses as to what “all dressed” flavor is? If so, please tell us.), about what time we should eat a snack, about what snack we’re going to eat next, and about how if I were at home I would be finding a way to engage in my most favorite of snacks – “fruit and cake-type thing with yogurt.”

That’s what I said when Brett and I asked each other to dream up our most perfect snack, somewhere between Vancouver and Banff. (This is what any modern, fun-loving young couple does while driving long distances, by the way – ask each other questions like “what’s your idea of the perfect snack?” Don’t get too jealous of all the awesome fun we’re having.) Whole wheat banana bread with brown butter

I’ve always loved banana bread. When I was young, my great-grandmother made it every few weeks and keep it wrapped in wax paper in a kitchen drawer, and I’d sneak slices whenever I could, preferably slathered with a pat of salted butter. After I stopped spending every day at her house before and after school, my opportunities to eat banana bread became more scarce, particularly because most people (and bakeries) fill their banana bread and banana muffins with walnuts or some other lurking nut menace.

All of this means I eat banana bread pretty rarely, and the last few times I made it at home I was always a little disappointed. It was tasty, certainly, but somewhat boring. A little too sweet, and a little too cakey, and a little too simple. It always left me wanting something more complex and flavorful – something toastier and more subtly sweet, that would fit as comfortably on a plate with eggs as with a cup of coffee in the afternoon.

Spiced donut muffins (and a wish list)

I want someone to wash all my dishes for me.

I want to live in a house with actual insulation and windows that close all the way.

I want my favorite shoes to never wear out, and I want an endless supply of Patagonia yoga pants.

I want to stop accidentally burning myself on the inside of my oven. (Do not ask me why this keeps happening.)

I want to be able to run more than twice a week without my knees staging a coup.

I want to eat a donut for lunch, then maybe a donut for a snack. Then a donut for breakfast the next morning.
